Details
Enterocin refers to a family of bacteriocins produced by Enterococcus species that inhibit closely related Gram-positive bacteria. These peptides act primarily by inserting into the bacterial membrane, forming pores that disrupt membrane integrity and lead to leakage of cellular contents, chromosomal condensation, and cell lysis. Immunity and cross-resistance mechanisms are mediated by dedicated ABC transporter systems that protect producer strains. Due to strong antimicrobial and biofilm-inhibitory properties, enterocins are widely investigated as natural food biopreservatives and as potential alternatives or adjuvants to antibiotics.
